Cauliflower Bake

1 Pack of Birdseye Steamfresh Cauliflower Florets
4 oz cream cheese
1/4 cup of sour cream
1/2 cup of light shredded three cheese blend
salt and pepper to taste
Directions
- Cook the florets in the microwave according to the packet and place in a medium size bowl.
- Add cream cheese, sour cream and a pinch of salt and pepper. Mash with a potato masher or fork until the florets are broken up into small pieces.
- Add half of the shredded cheese to the mixture and mix with the fork until distributed evenly.
- Spread the mixture into a small cast iron pan and sprinkle the remaining cheese on top.
Bake at 400 degrees for 10 minutes then broil until brown and crispy on top.

- Try this delicious recipe as a side or by itself. It tastes like macaroni and cheese but has a different texture. Use more or less cheese depending on your preference.
