Try this quick and easy version of Italian bruschetta.
Ingredients
4 ripe tomatoes
2 cloves garlic, minced
1 Tbsp extra virgin olive oil
1 teaspoon balsamic vinegar
6-8 fresh basil leaves, chopped
salt, to taste
pepper, to taste
1 baguette French bread
1/4 cup olive oil
Directions
- Blanch and peel the tomatoes. Set aside and let cool.
- Preheat oven to 450°F.
- Once cool, chop the tomatoes. Then, toss the tomatoes with garlic, olive oil, vinegar, basil, salt, and pepper.
- Slice the baguettes into thin pieces and place the baguette slices in the oven to toast. Toast until lightly browned around the edges.
- Serve the toasted bread with the tomato mixture. Enjoy!
