Try this quick and easy version of Italian bruschetta.

Ingredients

  • 4 ripe tomatoes

  • 2 cloves garlic, minced

  • 1 Tbsp extra virgin olive oil

  • 1 teaspoon balsamic vinegar

  • 6-8 fresh basil leaves, chopped

  • salt, to taste

  • pepper, to taste

  • 1 baguette French bread

  • 1/4 cup olive oil

Directions

  • Blanch and peel the tomatoes. Set aside and let cool.
  • Preheat oven to 450°F.
  • Once cool, chop the tomatoes. Then, toss the tomatoes with garlic, olive oil, vinegar, basil, salt, and pepper.
  • Slice the baguettes into thin pieces and place the baguette slices in the oven to toast. Toast until lightly browned around the edges.
  • Serve the toasted bread with the tomato mixture. Enjoy!
