Brown rice (one minute microwavable brown rice)
Fresh tomato salsa (produce section)
One avocado
Pulled seasoned chicken thighs
Directions
- Season chicken to your liking and cook in a slow cooker for about 2-3 hours. Cut the avocado in half and remove the pit. Place cooled, cooked chicken inside the avocado half and serve with fresh salsa and your choice of microwavable brown rice.
Notes
- This recipe is perfect for those days when you just don’t have the time to cook and you don’t want to break your healthy eating streak. The recipe does call for use of the slow cooker so I do recommend prepping on a Sunday and utilizing the cooked chicken throughout the week for meals similar to this one (chicken lettuce wraps, chicken salads, etc).
