Ingredients

  • 1 can solid white albacore tuna in water

  • 1/4 cup vegan mayonnaise

  • 1/4 cup diced onions (or more if you love onions as much as I do)

  • 1/4 cup diced red and green peppers

  • salt and pepper to taste

  • 1 avocado cut into slices

  • romaine lettuce

Directions

  • Drain tuna and place into a bowl. Add vegan mayonnaise, diced onions and peppers and mix. Add salt and pepper to taste and mix again. Divide evenly, place one avocado slice on top of lettuce wrap, then place one scoop of tuna on top. Roll lettuce starting from bottom and make your way up to the top.

Notes

  • This tuna avocado wrap is a great low carb snack or lunch. This wrap is my “go to” during my smoothie cleanses when I must have something to eat.
