1 lb chicken thighs or breasts
2 juiced limes
1 cup of water
1/2 cup salsa of your choice
1 tablespoon chili powder
1 tablespoon garlic powder
Directions
- Cut excess fat from chicken. Place the chicken and other ingredients in a slow cooker.
- Pour in 1 cup of water. Cook on low for 4-5 hours.
- After the chicken has cooled, pull apart with fork or fingers to shred.
Notes
- Top with avocado, fresh cilantro, small white onion, hot sauce, lettuce or your topping of choice. This recipe pairs well with a cauliflower tortilla.
