1 red snapper
3-4 tablespoons olive oil
All purpose seasoning (Doc’s)
Directions
- Preheat oven to 450 degrees F.
- Clean and scale the fish and butterfly or cut in half down the middle. Season thoroughly with Doc’s Seasoning or an all-purpose seasoning.
- Place the olive oil in a skillet on medium-high and ensure the bottom of the skillet is lightly coated.
- Sautee fish on both sides for about 3 minutes each or until brown.
- Seal the fish in foil and leave a slight opening to allow the steam to escape. Place the fish on a baking sheet and bake for 15 minutes or until cooked through.
